Baked potato with chilli cheese
- 4 russet potatoes, washed, patted dry, and pricked with a fork
- Chilli con carne (find our recipe here)
- 2 tbsp olive oil
- Grated cheese, to sprinkle
Method:
- Heat 1 tbsp of oil a skillet over a medium heat and make the chilli con carne.
- Make the potatoes while the chilli simmers.
- Preheat oven to 425°F/220°C.
- Rub 1 tbsp of oil on potatoes and then sprinkle with salt.
- Microwave on high heat for 6 minutes, but don’t cover.
- Turn over and then microwave for a further 4 minutes or until cooked through.
- Transfer potatoes to a baking sheet and bake for 20 minutes or until skins are crisp.
- Cut a slit on each potato to open and then spoon a mixture of the chilli on top of each potato.
- Sprinkle with grated cheese and serve.
